Normal Lunch: No Sides Edition

Raise your hand if your kids have had frozen chicken nuggets for lunch for the past 4 days in a row. … Yeah. I raised my hand, too. Lunch for my kids is something that has been hard for me as a mom. I am always in a rush to get them fed and in bed so I can have my quiet time.

So, this week, I’m going to throw some ideas at you to help you spice things up a bit. Don’t worry. I’m not judging you for your chicken nugget habit. I’m just giving us both a bit of a kick in the pants.

**Note: If you’re looking for kids lunches with sandwiches cut to look like woodland creatures with banana and raisin eyes, you’ve come to the wrong place. Those lunches aren’t normal.**

Sometimes, coming up with sides is too much for a mom. Don’t worry! That’s not always bad. Continue reading

You know what? You’re kids don’t have to eat meat at every meal. They need protein, but not meat. Hot dogs don’t really count as either, anyway.

Boiled egg, watermelon, broccoli, dip and pistachios.

Let’s take a look inside B’s lunch box.

I usually pack my kids’ lunches FULL. For us, if there’s a time when they’re not eating at home, it’s probably a time when they’re exerting themselves either me tally or physically. If they aren’t hungry for all of it, they’ll leave some, but more often than not, it’s all gone. They also get variety without crap. They can’t just eat their oatmeal cream pie and then say they’re full.

PB&J on a leftover croissant (Kids will eat PB&J on anything if they like it. Mix up your breads.), whole grain crackers broccoli, Caesar dip, grapes and pistachios.

1 T. lemon juice
2 garlic cloves, minced
2 anchovy fillets, rinsed and minded
Pinch of pepper

Stir everything together. Put it all in a blender and blend until the anchovies are combined. Refrigerate at least for one hour before serving.

My Heaven: Version 2

A couple months ago, I wrote about what one of my favorite places in the world is. Today, it’s not a place therefore I’m not sure if it can be compared to Heaven. Maybe manna? Anyway, it’s this.

Blue Bell Pecan Pralines and Cream, ladies and gentlemen.

This ice cream – Can I even call it just ice cream?! – is just… guuuuuuh. It’s base is a perfect, perfect vanilla. There is a swirl of caramel that twists its way through the perfection. Then, oh, and then, there are these pecan pieces that are coated in sugar. They taste like Frosted Flakes but better. These little morsels must be the boogers of God and if God’s boogers are wrong, I don’t want to be right.

So, take my advice: Get some of this. Now. Go. GO, I tell you! No, thank me later, just, GO!
