Normal Lunch: No Sides Edition

Raise your hand if your kids have had frozen chicken nuggets for lunch for the past 4 days in a row. … Yeah. I raised my hand, too. Lunch for my kids is something that has been hard for me as a mom. I am always in a rush to get them fed and in bed so I can have my quiet time.

So, this week, I’m going to throw some ideas at you to help you spice things up a bit. Don’t worry. I’m not judging you for your chicken nugget habit. I’m just giving us both a bit of a kick in the pants.

**Note: If you’re looking for kids lunches with sandwiches cut to look like woodland creatures with banana and raisin eyes, you’ve come to the wrong place. Those lunches aren’t normal.**

Sometimes, coming up with sides is too much for a mom. Don’t worry! That’s not always bad.

Potatoes have a bad reputation.  Yes, they’re a carbohydrate.  So is broccoli, kids.  Maybe let’s not serve them with a giant plate of pasta.  Potatoes are an excellent source of vitamins C and B6 and potassium as well as fiber.

Along with all of that goodness, they’re a one-bowl, hot meal that has endless possibilities.  If you top them with dairy, they get protein.  If you give them a slice of melon as they run out the door to play, they’re having fruit, too.  You can even put meat on them, meat lovers.  Don’t second guess yourself when you consider putting leftover chicken salad on a baked potato.  Follow your heart!
